If your mother is anything like mine, whatever food you put in front of her this Sunday for Mother’s Day (or most any day) will make her happy, mostly because you made it for her and also because she did not have to lift a finger to do anything other than eat it.

When most people picture waffles, they imagine crispy on the outside, fluffy on the inside, round, dimpled deliciousness, topped off with the traditional accompaniments of butter and of course maple syrup.

There are multitudes of different ingredients for preparing the waffle batter as well as for pouring, sprinkling and placing on top of them, here are a few recipes that will make mum feel proud and satiated to start her special day.

Monte Cristo Waffle Sandwich

A gloriously decadent meeting of ham, turkey and bacon between crispy waffles with the sweetness and slight acidity of apricot or plum preserve make this her new favourite mother’s day brunch.

Melding the two flavours of sweet and salty is waffle making 101 and this recipe hits the spot with the addition of sharp and creamy Havarti cheese, this combination of ingredients reminiscent of a Swiss chalet breakfast.
