Scotch Whisky and Chocolate; A Decadent Match Made in Heaven

Award-winning writer Warren Ellis said, “Scotch whisky is made from barley and the morning dew on angel’s nipples,” the only substance that could possibly rival the fervour and passion shown for whisky may just be that other heavenly vice, chocolate.

With inspiration from above, venerable Speyside Distillery The Macallan has just announced the first edition of its Macallan Harmony Collection Rich Cacao Single Malt Whisky.

The iconic Scottish brand was inspired by its 200-year-old connection to the natural environment and particularly The Macallan’s 485-acre estate in the Scottish Highlands when it decided to create the scotch whisky and chocolate collection.

The Macallan Harmony Collection’s packaging will be made from repurposed by-products of the chocolate-making process, the box crafted using discarded husks from cacao pods.

The whisky itself has been masterfully created by Polly Logan, Whisky Maker at The Macallan who works as part of the Whisky Mastery Team to drive forward The Macallan’s legacy for the future.

She travelled to Girona, Spain to find inspiration from world-renowned pastry chef Jordi Roca and master chocolatier, Damian Allsop, both of whom worked at El Cellerde Can Roca, a renowned restaurant that has won three Michelin Stars since 2009.

Allsop has worked with some of the world’s most prestigious chefs including Gordon Ramsay, Giorgio Locatelli and Joan Roca.

“The Harmony project has allowed us to work with different flavours, to interlock the chocolate flavour notes into The Macallan whisky. We have also made it an experience where you can have them together and one and one makes three. It has been a beautiful marriage of ideas and people.”

Logan searched the oak sherry casks being aged at The Macallan Estate for notes of chocolate and vanilla, carefully selecting the right ones to bring forward the right balance of flavours to shape this delectable whisky.

The limited-edition whisky is the first edition of an annual series and is available in Australia now for just under A$700 for 700ml.
